Top Chef and Airport Restaurateur Join to Win Large Dining Contract in Terminal B

 Kent Rathbun Concepts, in partnership with award-winning airport restaurateur and concessionaire Paradies, is proud to announce that Hickory has been selected to open a new location in Terminal B at Dallas-Fort Worth International Airport. Hickory is the newest concept from Chef Kent Rathbun and one that puts an elevated spin on two of Rathbun’s favorite foods— barbecue and burgers.

“We’re excited to bring the Hickory Concept to DFW Airport, where we can provide our loyal guests and plenty of new ones with great food in a comfortable setting,” said Rathbun. “Airport food doesn’t have to be boring, and we’ll prove that every day with our exciting menu of Texas-tinged comfort food and craft drinks.” Hickory will treat DFW passengers to the same masterful culinary experience by improving the traditional sports bar menu. Items will include Texas-style barbecue, including smoked pepper crusted Wagyu brisket, thinly shaved Roti pork shoulder, wood smoked pork loin chop and St. Louis style pork spare ribs – as well as several burger options – from your basic cheeseburger to more creatively topped fare like the Farmhouse Burger with pepper-crusted apple wood smoked bacon and fresh farm egg.  Patrons can also enjoy an extensive craft beer selection and the “Texas Born and Bred” specialty cocktail list, ensuring there’s something for everyone.

The new location will appeal to travelers with its cozy lounge, backlit bar, large HD TVs and a healthy collection of Dallas-area sports memorabilia from the past and present.
